This recipe is so simply and yummy, it should be a staple for everyone. It has two ingredients that you probably already have in your house – eggs and bananas. Added bonuses include the fact that they are much healthier than regular pancakes, and they’re incredibly toddler-friendly. Of course, they don’t taste exactly like regular, buttery pancakes (they taste mostly like banana) but you can play around with some add-ons to make them even more delicious, like baking powder (1/8 teaspoon) to make them fluffier, or vanilla (1/4 teaspoon) to make them sweeter. We also add blueberries (if they’re big, we cut them in half first to ensure Georgie won’t have any issues). Recipe below!
Ingredients
One ripe banana
Two large eggs
Instructions
Mash the banana until only a few small lumps remain
Add in any extra ingredients (vanilla, baking powder, blueberries, cinnamon, mini chocolate chips, cocoa powder, etc.) and the whisked eggs
Heat a pan over medium heat and add a little butter or vegetable oil (we use sunflower oil)
Drop the batter onto the pan in mini pancake size amounts. After a minute or two, use a spatula to gently lift the pancake and check the bottom. Once it’s browned, flip it over and cook another few minutes.
